Some days you just gotta have it.
You will need the following:
1/4 C Earth Balance
1 package Elbow Macaroni (Regular or GF)
1/2-1 C Soy Milk
1 package Daiya Shredded VEGAN Cheddar
Cook Elbows according to package. Spread a thin layer of Earth Balance in baking pan and preheat oven to 350, set aside. In a saucepan, melt 1/4 C Earth balance, add cheese and 1/2 soy milk and melt together over low heat. Stir constantly with a whisk until cheese sauce is melted, adding more milk as needed. Drain macaroni and empty into baking pan. Pour cheese sauce on top and stir until all elbows are covered. Bake for 10-15 minutes.
Makes 4-6 Servings
OK – so this recipe is not going to win the nutritionist’s prize for best meal (and it will not serve you well if you are on a weight loss plan) – but it is so delicious to have on a rare occasion and – you could have a nice green salad or some sauteed spinach or kale and redeem this bad boy.
